Chicken Paella

1 pkg. Eckrich original smoky link sausage
2-3 boneless skinless chicken breasts
2 pkgs. Uncle Ben's long-grain and wild rice with herbs
2 16 oz. cans stewed tomatoes
1 pkg. frozen peas

Dice chicken and sausage into bite-size pieces and sauté in 2 tablespoons oil.  Cook over medium heat 20 minutes or until chicken is done.  Stir often.  Add rice, herb packets, 2 cans stewed tomatoes and 1 can water.  Bring to a boil and cook over medium heat with cover on.  Stir only once or twice.  When most of water is absorbed and rice almost done, add package of frozen peas and cook for 5 more minutes.  Serve with French or Italian bread, salad and slices of cheddar for a deliciously wonderful and easy meal.                        - Janet Sankey
